Kelli Kirkland wears many hats; actress, mom, multi-tasker, but even the greatest superhero had her downfall. Kirkland admits that her kryptonite?was her cooking. After joining the cast of Worst Cooks in America, she learned to battle that unhealthy demon.?
SM: What inspired you to join the Food Networks? Worst Cooks in America team for their 3rd season?
KK: ?The desire to feed my son good, healthy food was the impetus for me applying to Worst Cooks.?
SM: What kind of tricks/tips did you learn in the kitchen throughout your stay on the show?
KK: ?The 3 best tips I learned during my Worst Cooks experience were 1) Taste your food numerous times throughout the cooking process. If you taste while you cook you can correct mistakes, but once it?s done it?s too late. 2) Use fresh ingredients, herbs and spices whenever possible to get the best flavor imaginable. ?Fresh is best! 3) Don?t be afraid to try something new. Experimenting is the only way you?ll ever improve.?
SM: How has your experience on the show changed your at-home work in the kitchen?
KK: ?No one frowns or cries when I say ?dinner?s ready?!?
SM: As a mother, please provide our busy moms with tips on how to make healthy, balanced meals for a family with little time to prepare.
KK: ?My #1 tip is the crock pot! No oil, no hassle, no mess. You can put tons of healthy ingredients in the crock pot before you get the kids off to school in the morning and by the time you get home dinner is ready! It just doesn?t get any easier than that. ?So invest in a crock pot ($45 or less) and look online for awesome slow cooker recipes.?
SM:?How do you stay healthy throughout the week? Do you prepare food? Do you follow a certain diet plan?
KK: ?I stay healthy by planning my meals for the week ahead of time and only buying healthy snacks. If chips and cake are in the house I will eat them, but if I only have fruit, veggies and whole grain healthy snacks that?s what I?ll eat. You have to think ahead to stay in shape!?
SM: What is your favorite recipe to bring to parties/events?
KK: ?Brie with apricot jam, candied walnuts and craisins wrapped in a crescent rolls and baked. This is a treat (definitely not for when I?m watching my weight), but it?s super easy and is always a crowd please. My friend Dana gave me the recipe and I will love her forever for it!?
SM: If you could indulge in one meal as often as you wanted, regardless of the nutrition, what would it be?
KK: ?BBQ baby back ribs. My guilty pleasure!?
SM: If you could cook with any celebrity, dead or alive, who would it be?
KK: ?I would cook with Pat and Gina Neely. They sure know how to cook and seem like they?re having a ball while doing it!?
SM: What is one appliance in your kitchen that makes your life that much easier?
KK: ?My crock pot, I couldn?t live without it.?
SM: Could you please provide us with 1-2 skinny recipes in any of the following categories: Skinny Meals, Skinny Snacks, Skinny Sides, Skinny Apps, Skinny Desserts, or Skinny Drinks.
Lemon & Garlic Kale Cups with heirloom tomatoes.
?Lightly saut? 1 pound of chopped kale in garlic flavored olive oil, add in 3-4 cloves of freshly crushed garlic and 15 heirloom tomatoes that have been cut in half, add kosher or sea salt and pepper to taste. Dress with juice from half of a freshly squeezed lemon. Remove from heat and serve?in small bowls or ramekins.?This makes for a colorful, delicious and healthy appetizer at any party.?
